Chicken In Wine with Mushrooms

24 saltines
1/2 tsp. salt
1/2 tsp. tarragon
Dash pepper

Roll out and mix above ingredients in gallon-size zipper food storage
bag. Dampen 4 large boneless, skinless, chicken bread pieces, then
shake in crumb mixture. Brown in one stick of butter.  Remove to
baking dish.

Using same frying pan, with the leftover butter and cracker bits still
in it, mix:

1/4 cup chopped onion
1/2 cup sliced fresh mushrooms
1/4-cup chicken broth
1/2 cup white wine

Simmer mixture 5 minutes and pour over chicken.  Cover tightly with
foil.  Bake 45 minutes at 350 degrees.  Serves 4.
