Taco Bell's Burrito Supreme 1 pound lean ground beef 1/4 cup all-purpose flour 1 tablespoon chili powder 1 teaspoon salt 1/2 teaspoon dried minced onion 1/2 teaspoon paprika 1/4 teaspoon onion powder dash garlic powder 1/2 cup water 1 16-ounce can refried beans eight 10-inch flour tortillas 1/2 cup enchilada sauce 3/4 cup sour cream 2 cups shredded lettuce 2 cups shredded cheddar cheese 1 medium tomato, diced 1/2 cup diced yellow onion 1. In a medium bowl, combine the ground beef with the flour, chili powder, salt, minced onion, paprika, onion powder, and garlic powder. Use your hands to thoroughly mix the ingredients into the ground beef. 2. Add the seasoned beef mixture to the water in a skillet over medium heat. Mix well with a wooden spoon or spatula, and break up the meat as it cooks. Heat for 5 to 6 minutes, or until browned. The finished product should be very smooth, somewhat pasty, with no large chunks of beef remaining. Let the mixture cool somewhat while going to the next step. 3. Heat up the refried beans in a covered container in the microwave set on high temperature for 1 1/2 to 2 minutes. 4. After the meat mixture has cooled somewhat, put it in a food processer and grind it up for a few seconds. 5. Place the flour tortillas on a microwavable plate and invert another plate on top. Heat the tortillas for 30 to 45 seconds in the microwave on high temperature. 6. Build each burrito by first spreading about 1/4 cup of refried beans on the center of a heated flour tortilla. Spread one-eighth of the meat mixture over the beans, then pour about a tablespoon of the enchilada sauce over the meat. 7.Stir the sour cream well, so that it is smoother, then spread about 1 1/2 tablespoons onto the burrito. Arrange some of the lettuce, cheese, tomato and onion onto the tortilla, and then you're ready to roll. 8. Fold the end of the tortilla closest to you over the filling ingredients. Fold either the left or right end over next. Then fold the top edge over the filling. You will be leaving one end of the burrito open and unfolded. Repeat with the remaining ingredients and serve immediately. Makes 8 burritos. Taco Bell's Taco Seasoning Mix 1 1/2 teaspoons dried minced onion 1 1/4 teaspoons salt 1 teaspoon paprika 3/4 teaspoon crushed beef bullion cube 1/4 teaspoon sugar 1/4 teaspoon cayenne pepper 1/4 teaspoon garlic powder dash onion powder Combine all of the ingredients in a small bowl. 1. BROWN ground beef; drain. Add seasoning mix and 3/4 cup of water. Bring to a boil; reduce heat. Simmer uncovered, 10 minutes, stirring occasionally. Let cool and process in the food processor for a few seconds. (You gotta get that same texture!) 2. HEAT taco shells in the oven at 350 for about 10 min. Heat tortillas on a microwave safe plate with another plate inverted on top of it for a min. 3. SERVE bowls of seasoned ground beef, lettuce, tomato and cheese. Pass the taco shells or tortillas and let everyone chow down! Taco Bell Sauce 6 oz Tomato paste can 3 c Water 2 t Cayenne pepper 1 1/2 T Chilli powder 2 1/2 t Salt 2 t Cornstarch 2 t Distilled white vinegar 1 T Minced dried onion 2 T Canned jalapeno slices ("nacho slices") 1. Combine the tomato paste with the water in a saucepan over medium heat. Stir until smooth. 2. Add the cayenne pepper, chilli powder, salt, cornstarch, vinegar, and dried onion and stir. 3. Chop the jalapeno slices very fine. You can use a food processor, but don't puree. The best kind of jalapenos to use are those bottled for nachos or pizza. Add them to the mixture. 4. Heat the mixture to boiling. Continue to stir about 3 minutes and remove from the heat. 5. Let the sauce stand until cool, and then put in a tightly sealed container and refrigerate. This will last for 1 to 2 months. Makes 3 1/2 Cups. Taco Bell Cinnamon Twists Notes: Lisa from Portage was kind enough to send in this recipe. She recommends that you use a fry daddy for this recipe. I would guess that you could use a Dutch oven if you didn't have one, and needed something deep to fry in, just be extra careful of not g Ingredients: 1/2 C. Sugar 1 Tbsp. Cinnamon rotinni noodles (You must use a rice based noodle !!! ) 3 C. of oil (I recommend peanut oil) Preparation: Combine cinnamon and sugar in a small bowl and mix well. Heat oil to about 500 degrees, be careful not to let the oil to smoke. When the oil is hot enough, drop a handful of uncooked noodles, drop only a few at a time. Deep fry for 30 seconds. You will know when they are done because they will sink to the bottom and then resurface. Place cooked noodles on some paper towels so they can drain. Sprinkle cinnamon and sugar mix over them. Applebee's Quesadillas Ease of Cooking: Easy Serving Size: 1 Notes: No one can match the taste of Applebee's Quesadillas. This CopyKat version of their quesadillas comes pretty close. Be sure to serve with your favorite guacamole and sour cream. Ingredients: 2 Slices of Lean Bacon (sliced into 1/2" pieces) 2 Flour Tortilla Shells (8" diameter) Softened Butter (softened for lightly spreading on tortilla shells) 1 Tbsp. Pico de gallo 1/4 C.Shredded Colby/Monterey Jack Cheese Sour Cream Guacamole Picante Sauce Preparation: Slice bacon and fry until bacon starts to turn crisp but not hard and brittle. Remove from pan, drain bacon and set aside. Spread butter lightly on one side of the flour tortilla shell. Place buttered side of shell down, into a non-stick fry pan that has been preheated on medium heat. Sprinkle 2 tablespoons of bacon over entire shell, then add 1 Tbs. Pico de gallo, and 1/4 cup shredded Colby/Monterey Jack cheese over the bacon. Place the second flour shell on top of fixings, buttered side up. Cook for about one - two minutes just long enough to heat the inside ingredients and then carefully flip the quesadilla on the other side and finish cooking. The quesadilla should be heated through but not browned. Remove quesadilla and place on a serving dish and cut into individual triangle serving pieces. Serve quesadillas with your favorite guacamole sour cream, and picante sauce. Denny's Bacon Caesar Burger Notes: Just went there the other night, and knew immediately I had to share this one. I will give quantities for one burger, and you can go from there. Ingredients: 1 Hamburger bun 1 Hamburger pattie 1 slice Romaine lettuce 2 Hamburger slices of dill pickles 1 slice of red onion 2 slices of tomato 2 slices Monterey Jack cheese 2 slices of bacon cooked 1/4 C. Caesar dressing - served on the side Preparation: Cook hamburger pattie and season with salt and pepper. Toast the bun separately, I always put a little butter on each side of the bun, and toast slightly in a skillet, or you can even do this in the oven using the broiler. Assemble like this: Starting from the bottom bun. Dairy Queen Onion Rings Notes: These are from the Dairy Queen restaurants in Southeast Texas. All Dairy Queens are not equal, some do only ice cream treats, come are Brazier stores, and some are not. Ingredients: 2 Vidalia onions or even 1015's when in season 2 C. flour 2 C. fine cracker crumbs 2 C. white corn meal 2 C. Buttermilk 1 C. Water 4 C. Crisco oil (or enough for your personal fryer) Preparation: Slice onions 1/2 inch thick, do not use the very small rings, save those for chopped onions. In a large bowl add buttermilk and water. Take out rings one at a time and coat them with flour then with buttermilk, and then coat with corn meal. Drop into hot oil and fry till golden. Drain on paper towels. Hershey's Chocolate Syrup Notes: This is a great way to save money, and still have that famous taste. Ingredients: 1/2 C. Cocoa (Hershey's obviously) 1 C. Sugar 1 C. water 1 tsp. Vanilla Dash of salt Preparation: Combine cocoa, sugar, and salt in a saucepan. Add water, and mix until smooth. Bring this mixture to a boil. Allow it to boil for one minute, be careful this does not over boil. Remove from heat, when this cools add the vanilla. Hooters Hot Wings Ease of Cooking: Beginner Notes: Hooters is known for their classic Hot Wings. You can try something similar at home. Ingredients: 4 1/2 LB - 5 LB. Chicken Wings ( cut into drumettes and flappers) 2 C. Whole Wheat Flour 1 C. All Purpose Flour 2 1/2 tsp. salt 1 tsp. Paprika 1/4 tsp. Cayenne Pepper Hooters Hot Wing Sauce Preparation: In large mixing bowl mix flours, salt, paprika and cayenne pepper together, blend well. Cut chicken wings into drumettes and flappers. Wash and drain chicken. Coat chicken in flour mixture, refrigerate chicken wings for 90 minutes. When ready to deep fry chicken wings heat oil to 375. Place chicken pieces in hot oil, do not crowd. Fry chicken wings until golden brown, remove from oil and drain. When all wings have been fried,place in a large bowl. Add Hot Sauce mixture and mix completely. Use a fork or tongs to place chicken pieces on a serving platter. Serve immediately and with lots of paper towels. Hooters Special Dipping Sauce for Wings Ease of Cooking: Beginner Notes: This is a copy of their sauce that you can find at the table in bottles. You may wish to use this on other things. Ingredients: 8 oz Tobasco Sauce 3 Tbsp. brown sugar 2 Tbsp. ketchup Preparation: Mix all three ingredients together in a small sauce pan. Simmer over medium low heat for 10 minutes, stir frequently. When sauce has simmered and completely blended pour in a small serving bowl and let cool before serving. Hooters Chicken Wing Hot Sauce Ease of Cooking: Easy Notes: Hooters is known for their delicous Hot Wings. You can enjoy these at home. Ingredients: 3 Sticks Butter (softened) 1/2 C. + 2 Tbs. DRY Instant Chicken Broth (Do Not Use Canned) 2 tsp. Seasoned Salt 1/2 tsp. Black Pepper 1 C. Flour Preparation: 1. Cover chicken with mixture of water and salt. Chill in bowl for least 1 hour. 2. Combine herbs, onion powder, seasoned salt, instant chicken broth, and pepper in a blender and mix well. Place this mixture in a bowl. Add the flour to this bowl. Mix flour and seasonings well. 3. Remove chicken from water, and dip it into the flour mixture coat well. Place coated pieces on a plate for 5 minutes. 4. Melt enough shortening or salad oil to make 1 inch depth in a large skillet. Heat to 375 degrees. Fry chicken pieces turning once, every 5 minutes, be sure to cook chicken until done. Lift chicken out and drain on paper towels. You can keep the chicken warm in the oven by placing it in the oven, and serve when all pieces are finished cooking. MSG stands for MonosodiumGlutamate. It is a spice, found in your grocery store. It can be sold as MSG or under the brand name "Accent". Some people are extremely allergic to MSG, over 98% of the population is not. It serves to make flavors stronger, and almost pop right out at you. . Fines herbs used to be used more frequently many years ago. Fines herbs was a poultry seasoning. Since so many people have difficultly in obtaining the herb, it has been removed from the recipe. If you can access Fines herbs add 2 teaspoons to the flour mixture. KFC Honey BBQ Strips Ease of Cooking: Medium Difficulty Serving Size: 6 Notes: These are some very tasty strips! Enjoy! Ingredients: 2 lbs Boneless, Skinless Chicken Strips 2 3/4 C. Flour 1 tsp. Let sauce cool slightly, dip one chicken breast strip in sauce at a time and place in a baking pan that has been sprayed lightly with a none stick spray.
