Ingredients
1 pound dried apricots
1/2 cup sugar
1/2 cup slivered almonds
10-12 whole almonds (optional)
 

Cooking Instructions
Soak apricots overnight in 3 1/2 cups water.  The next day, simmer the apricots in the same water until they are soft.  Place apricots and water into a food processor and puree.  Return them to the pan and add sugar and slivered almonds.  Simmer gently and stir periodically until mixture is thick.
Pour mixture until dessert cups, add one dried apricot and one whole almond at top, and chill for several hours.
 
 

Egyptian Kofta

Ingredients
2 1/2 pounds minced beef
3 medium onions
1 slice bread
1/2 cup milk
salt and pepper (or any other meat
seasoning you like, such as Lawry's)

Cooking Instructions
Make sure to use beef which has some fat,
as this will add to the flavor.

Mince beef and onions in a food processor
until smooth. Soak the bread in the milk,
and add to the beef mixture. Season to
taste. Mix well and shape into fingers
about 3" long. Grill on skewers or fry.
 
 

Egyptian Omelet

Ingredients
1 large onion
3 tablespoons butter
2 cloves garlic
salt and pepper
8 eggs
6 tomatoes
6 tablespoons grated parmesan cheese or 3 tablespoons crumbled feta cheese (optional)

Cooking Instructions
Skin and slice the tomatoes.  Finely chop the onion and lightly fry in the butter in a large frying pan.  Crush the garlic and add to the onion.   When lightly browned, add the tomatoes and salt and pepper.  Cook gently, turning several times, until tomatoes are soft.

Beat the eggs lightly, add cheese if desired, and add to the frying pan.  Cook over low heat, periodically loosening egg from sides of pan, until set on one side.  Turn and cook on reverse side.
 
 
 

Egyptian Stuffed Potatoes

Servings  Preparation Time

Ingredients
8 medium potatoes
2 cups tomato juice
2 pounds minced beef
2 medium onions
cooking oil
salt and pepper (or any other meat
seasoning you like, such as Lawry's)

Cooking Instructions
Select uniform-sized potatoes.  Peel, core and soak for 15 minutes in salted water.
Meanwhile,  fiinely chop the onions and brown in the oil until a pale gold.  Add minced beef and seasoning.  Saute until beef is cooked through.
 

Dry potatoes thoroughly and fry in oil until brown.  Remove and soak excess oil with a paper towel. Stuff each potato with beef mixture.  Arrange potatoes in an upright position in a pot.  Pour tomato juice into pot and cook on low heat for about 30 minutes.
 
 
 

Egyptian Salad

Ingredients
12 cucumbers
1 cup plain yogurt
5 cloves garlic
1 teaspoon powdered mint

Cooking Instructions
Peel cucumbers and cut them into rounds of 1/2".  Crush garlic into yogurt and stir.  Pour yogurt mixture over cucumbers and stir gently together with mint.
 
 

Egyptian Zucchini

Ingredients
1 large onion
3 tablespoons butter
2 pounds zucchini
salt and pepper
3 eggs
2 cups grated cheddar cheese
2 tablespoons grated parmesan cheese

Cooking Instructions
Wash, scrape the zucchini.  Trim the ends and cut into 1/4 inch rounds  Steam for 3-5 minutes.

Finely chop the onion and lightly fry in the butter in a large frying pan.

Layer zucchini and onion into ovenproof dish.

Beat the eggs lightly and add cheese.    Add salt and pepper if desired.  Pour over zucchini and onion mixture and bake in a 375 degree oven for about 20 minutes, until top is lightly browned.
