ORANGE RUM CAKE1 cup butter, softened
1 1/2 cups sugar
2 1/2 cups all-purpose flour
3 eggs
1 tsp vanilla
1/2 tsp salt
1 tsp baking powder
1 T orange zest, grated
1/3 cup orange juice
1/4 cup rum
Preheat oven to 350F degrees.
Cream together butter and sugar. Add remaining ingredients and
mix
well.
Grease and flour a tube pan. Pour batter into pan and bake at
350F
degrees for 45-50 minutes.
Note: If you prefer not to use rum, increase orange juice to 1/2
cup
and use 1 tsp. of rum extract.
